Despite its name, wild rice is not always wild and it is not actually rice. Rather, it is the seed of a wild aquatic grass indigenous to North America.Wild rice is the seed grain of a wetland grass, Zizania Aquatica. 10-15mm in length, it is cured and roasted to give an even black appearance. Wild rice is nutritious, too. It offers about fifty percent more fiber and protein than its cousin brown rice, which puts it on par with quinoa. It’s a suitable gluten-free substitute for farro, since the two are similar in texture.

Cooking instructions: Soaking can reduce cooking time. In a medium saucepan, combine 1 cup of wild rice, 4 cups of water (1 to 4 proportion), and salt and bring to boil on high heat. Reduce heat to medium or low and simmer/cook the rice for about 45 minutes, covered. Cook until the rice is soft but not mushy and until most of the grains are popped.
