The cacao comes from Peru. It is the criollo bean, one of the oldest native species and we feel the best tasting. The criollo cacao tree does not like to be mechanised, and prefers to grow in the canopy of other trees in a mixed plantation with avocado, lucuma and mango. AS such, our cacao comes from small farms that have just a handful of trees. The cacao is sun dried with most farmers working within supportive co-operatives.
It is from the same farms and cooperatives we’ve always sourced our cacao from.
Store in a cool dark place 16 – 18 degrees C.

The ginger is carefully screened, sieved and checked; however the occasional hard piece may remain.
